All you lovely Scandinavians out there... I need your help! We're planning on doing a 2-week road trip in July to Denmark and Sweden. I'm really looking forward to it and am browsing through rough guides and websites to get an idea of what we should do. But no better way to find out than through locals! So... Any cafes, restaurants, stores, towns, areas you would recommend? Mr. George is coming too so I think we'll be camping quite a bit. Any camping sites you would recommend?

I've been a terrible blogger... Still haven't really touched my camera! I'm going to try to get to it a bit more this week! Have a lovely week!

Today... For the first time ever (maybe 2nd or 3d time, but it's definitely a rare thing)... I was craving for salad. I kind of got into it while I was in the US. Our favorite pizza place (Nello's pizza) has this terrific salad called "the old world classic". Tons of ingredients: feta cheese, black olives, red onions, sun-dried tomatoes, artichoke hearts, garbanzo beans, mushrooms, cucumbers, and pepperoncinis. It is absolutely delicious and is served with a homemade dressing which is (not exaggerating) to die for! From that moment on I realized salads can be delicious (and they're also easy to make)! SO I made myself a salad today. Nothing compared to the old world classic, but definitely good enough to soothe my craving.

Do any of you have some nice salad recipes? And dressing recipes? I usually make a simple dressing with mustard, vinegar and olive oil... But would love to try something different!

I thought I would blog more in Belgium, but I actually haven't even touched my camera since I arrived back from the States! So to start off with "Belgium blogging", I must begin with Mr. George. Still as cute as can be... Playful, very well behaved and very sleepy in the mornings as you can see!

I've been doing a lot and nothing at the same time. I enrolled in a college program, midwifery. Something totally different compared to what I was doing this year. But I'm looking forward to it! I won't start 'til the end of september... So to pass the time I have been going for walks with Mr. George and have started to reaaally cook. I don't usually cook, but since I'm the only one in the house that doesn't really have anything to do like a job or school... It kind if makes sense. I just started doing it... And am actually really enjoying it. In the morning I pick out what I want to make, around noon I'll do some grocery shopping and in the afternoon I start cooking. It keeps me busy all day! (To be very honest, I've only done it twice... But I'm planning on doing it more frequently!)

A few days ago I made this lovely dish... Which was actually sooooo good!! I was raised in a vegetarian household... So never learned how to cook meat... But that chicken... Mmmmmm! I was very proud of myself! It turned out great! I never would have thought of seasoning chicken with ginger!

Tonight I'm going to make this lasagna. It sounds very cheesy, so I'm curious how it will turn out!

Last US pictures (2 to be exact)! Pacific Coast Highway (Highway 1). We drove down from San Francisco to LA, which was absolutely gorgeous! The views from the cliffs and the homes (huuuuge mansions) are to die for!

I'm a bit sick. Had a fever all day yesterday and am still not feeling too hot today. But apart from feeling miserable, I'm actually enjoying the time I have now to catch up on tons of blogs!

I absolutely loved this video, that I found through this lovely blogger. If you have 20 minutes to spare, definitely worth the time!

A smile from me to you. (Doesn't it look like a smiley face?)

I still haven't really "climated" yet. Food still doesn't agree with me, I still wake up regularly in the evenings and I think I'm getting a cold. Oh well... I'll give it another week.

This week is all about organizing and new beginnings. I'm quitting my current studies and am going to try something new. So now I need to figure out what I want to do next school year and what I want to do until then. Not easy... I have to make all these big decisions.

I just bought the latest Eels cd. Absolutely love love it.

San Francisco. 2 days. Lot's of walking.

I had expected it to be different... A bit more metropolitan, maybe a bit smaller too. But I had such a nice time! We did a two hour bus tour, yes I know very touristy... But so worth it. You really get to see the city that way without having to go up and down all those hills...
(Soooooo many hills!!)

I just realized it's the 1st of may, so HAPPY MAY!
